INGREDIENTS:
- 100g unsalted butter, softened
- 100g caster sugar
- 1 large egg
- 1 tsp vanilla extract
- 100g self raising flour
- 1/2 tsp baking powder
- sprinkles (optional)
METHOD:

Preheat the oven to 191 degrees C/375 degrees F, before you start. And line a baking sheet with cupcake cases.
Cream together the softened butter and caster sugar until it is smooth and creamy. Add the egg and vanilla extract, and mix until evenly incorporated. Fold the flour and baking powder into your batter, until well combined. Add some sprinkles in if you wish. And spoon into your cupcake cases. This should make about 10-12 cupcakes. Place carefully in your heated oven and bake for 12-15 minutes, until firm. When you remove them from the oven wait 15 minutes for them to cool before you decorate. ENJOY!
SIMPLE ICING
INGREDIENTS:
- 50g chocolate (you can use white, milk or dark if you’d like)
- 20g unsalted butter
- 75g icing sugar
- 2 tablespoons milk
Melt the chocolate and butter on a hob in a heat proof bowl, above a pan of boiling water. When melted, immediately remove from the heat, and leave to cool for 3-5 minutes. When cooled add the icing sugar a tea spoon at a time while mixing. Add the milk if you need it. Wait for it to cool before putting on your cakes. ENJOY!
