Shortbread

Ingredients:

  • 150g plain flour
  • 105g unsalted butter, cut into chunks and refrigerated
  • 50g caster sugar

Preheat the oven to 149C/300F/gas mark 2. Sift the flour into a bowl, add the butter and rub together with your finger tips until all is combined like a thick powder. Add the sugar and form into a ball. Line a cake tin with non stick baking paper and place the dough into the tin, and spread it to the edges. Get a fork and press down all the edges to make a line affect on the edges. Put in the oven for 25-30 minutes. Leave to cool for 15 minutes for decorating.

TO DECORATE:

Use double cream and whip it until it is thick and stands up on stiff peaks. Or make some buttercream. Put in a piping bag and pipe on spirals on the edges. Then cut into eight pieces.
