Vegan Chocolate cookies

Ingredients:

  • 175g Vegan margarine
  • 175g Caster sugar
  • 100ml soya milk (or almond or coconut milk)
  • 190g plain flour
  • 3 tbsp cocoa powder
  • 1 1/2 tsp bicarbonate of soda

Preheat the oven to 177C/350F/gas mark 4.

Cream together the vegan margarine and sugar until pale and fluffy, then add the soya/coconut/almond milk into the mix. Sift the dry ingredients (flour, cocoa powder, bicarbonate of soda) into the mix and then form into a dough.

Place non-stick baking paper onto a baking tray and scoop the dough onto it, a spoonful at a time.

Bake for 10 to 15 minutes.
