Ingredients:
- 75g unsalted butter
- 3 tbsp golden syrup
- 65g brown sugar
- 125g plain flour
- 1/2 tsp bicarbonate of soda
- 2 tsp ground ginger
Preheat the oven to 180C/350F/gas mark 4.
Melt the butter, brown sugar and golden syrup in a microwave, taking it out every 20 seconds to mix. Keep it in the microwave for about 2 minutes until the sugar is dissolved. Or you could do it in a pan over over boiling water.
Leave to cool for 15 minutes, and then pour into a bowl with the flour, baking soda and ginger and form into a dough.
Line a baking tray with non stick baking paper and make small balls out of the dough. Flatten them into disc shapes. Place them on the tray and put them in the fridge for 25 minutes.
When out of the fridge, put them in the oven for 10 to 15 minutes. Take them out and cool for 15 minutes before decorating (optional)
