Easter Cookies

Ingredients:

  • 170g unsalted butter (melted)
  • 200g light brown sugar
  • 100g caster sugar
  • 2 eggs
  • 1 tbsp vanilla extract
  • 250g plain flour
  • 1/2 tsp bicarbonate of soda
  • 250g chocolate chips

Preheat the oven to 170C/350F/gas mark 3.

Melt the butter in a microwave and mix it with all the sugar until well blended. Add the eggs and vanilla extract and mix until smooth. Sift the flour and bicarbonate of soda and mix until there is a smooth mixture. Fold in the chocolate chips. Put tablespoonfuls onto a baking tray lined with baking paper, make them at least 3 inches apart. Bake for 10-17 minutes.

When taken out cool for 15 minutes before decorating with melted chocolate. You can drizzle chocolate over them if you like.
