Focaccia

Ingredients:

  • 500g strong white bread flour
  • 1 tsp salt (plus extra sea salt for the top)
  • 4 tbsp olive oil (plus extra to grease)
  • 360ml warm water
  • 1 sachet (7g) yeast
Focaccia – most of it got eaten before I could take a picture!

In a large bowl, add the flour and salt. In a jug, pour your water, and mix in the yeast. Add the olive oil, and yeast water into the flour and form into a dough. Put the dough on a floured surface, and knead for 5-10 minutes, until you can lightly press your finger on it and it springs back. Rub olive oil onto a square tin and press out the dough to the edges. Leave to prove for 1-2 hours.

Preheat the oven to 204C/400F/gas mark 6. When the dough is proved, rub olive oil on top and sprinkle on salt. Now is the time to add on any other toppings, like olives and fried red onions

. Bake for 30 minutes.
