Ingredients:
- 115g unsalted butter
- 100g caster sugar
- 50g light brown sugar
- 1 large egg
- 1 tsp vanilla extract
- 2 tsp lemon essence
- 250g plain flour
- 1/2 tsp baking soda
- 40g white chocolate chips
In a bowl, cream together the butter and the sugars until pale and fluffy.
Then add in the egg and vanilla and lemon extract.
When all the ingredients are combined, add in the flour and baking soda, fold it in and gather it up into a dough ball.

Add in the white chocolate, and line to baking trays with baking paper.

Gather the dough into around 12 balls and place them on the baking trays. Evenly space out the balls, and bake it at 180C/350F/gas mark 4 for 20-25 minutes.

When out leave to cool for 10 minutes.
