Cookie Sandwiches

Ingredients:

  • 125g unsalted butter
  • 75g golden syrup
  • 1 medium egg
  • 350g self raising flour
  • 200g caster sugar
  • 1 tsp bicarbonate of soda

Preheat the oven to 160C/325F/gas mark 3.

In a pan, add the butter and golden syrup until the butter is melted, then take it off the heat and wait for it to cool. Add the flour, sugar and bicarbonate of soda in a bowl and add the cooled butter mix. Add in the egg and mix it all up until it forms into a dough, line two baking trays with baking paper. Make the dough into table spoon sized balls and put them on the baking tray, flatten them out a bit with your fingers. Bake for 15-20 minutes. When out, leave to cool for 15 minutes.

For the Filling:

Ingredients:

  • 500g icing sugar
  • 225g unsalted butter
  • 1 tsp vanilla extract

Blend together all the ingredients until smooth. Use a piping bag to pipe on the icing onto one cookie, and put the other on top.
