Pumpkin Scones

Ingredients:

  • 175g pumpkin puree
  • 50g grated parmesan cheese
  • 1 egg
  • 3/4 tsp Worcestershire sauce
  • 1/2 tsp salt
  • 2 tsp chilli oil
  • 120g plain flour
  • 2 tsp baking powder
  • 1/2 tsp bicarbonate of soda
  • Egg to egg wash

Preheat the oven to 200C/400F/Gas mark 6.

Mix together pumpkin puree, cheese, egg, Worcestershire sauce, salt, and chilli oil in a bowl. Add in the dry ingredients, (flour, bicarb, baking powder) and gather into a dough with your hands. On a floured surface, flatten the dough and cut out with a 5cm round cutter and put on a baking tray. Brush on egg, that has been whisked, to the scones, make sure you don’t add to much otherwise you will have scrambled egg! Bake for 15 minutes.
