I decided to make this pie because I really like the taste of limes! It’s like a fruity cheesecake. I also love using condensed milk in recipes. It tastes sooooo good! I hope you enjoy it, let me know if you make it.

Ingredients:
For the Base:
- 250g digestive biscuits
- 90g unsalted butter, melted
For the Filling:
- 397g (can) condensed milk
- lime zest and juice of 5 limes
- 300ml double cream
- 85g crème fraiche (fraîche)
23cm round fluted tart tin.
For the base: Crush the biscuits in a bowl, or blend them in a food processor until fine. Add in the melted butter, and mix until well blended. Pour it into a tart tin, and press it down and up to the sides until and even base. Put it in the fridge while you make a filling.

For the filling: Mix the condensed milk, lime zest, juice and cream together until combined. Add in the crème fraîche and mix. Pour the filling into the chilled base, and put back in the fridge for 2 hours at least.

If you have extra filling, you could blend up some biscuits, put them in a small glass and add the filling, now you have a mini key lime pie. Put them in the fridge before eating.
