Extra-Fudgy Blondies

Everyone loves brownies, yummy, fudgy and chocolatey. But these blondies (white chocolate brownies) are something for the white chocolate lovers out there! I hope you enjoy these white chocolatey blondies!

Ingredients:

  • 200g unsalted butter
  • 200g white chocolate
  • 175g plain flour
  • 1 tsp baking powder
  • 300g caster sugar
  • 3 medium eggs
  • 1 1/2 tsp vanilla
  • A pack of white chocolate chips (optional)

Preheat the oven to 180C/350F/gas mark 4.

Break the chocolate in a heatproof bowl with the butter, melt it over a saucepan of boiling water on the hob or in the microwave. If you are using the microwave, take it out every minute to stir. Leave to cool for 10-15 minutes, make sure before you add it into the mix it isn’t that warm.

In a bowl, whisk the sugar and eggs until very thick and a little foamy, this will take 2-3 minutes. Pour the white chocolate mix into the egg and sugar mixture and add the vanilla extract. Add in the flour and baking powder until well combined.

If you would like you could add a pack of white chocolate chips.

Line a brownie tin with baking paper, and pour in the batter. Bake for 30-45 minutes, until a knife comes out clean.

Leave to cool for 20 minutes before serving/eating.
