Mother’s Day Vegan Jam Stars

Lot’s of people (especially mothers) are vegan now… so I made these delicious jammy stars that are vegan! Even if your mother (or you) isn’t vegan, these still taste amazing! I hope you like them, remember they don’t just have to be served at mother’s day!

Ingredient:

  • 90g vegan butter
  • 75g icing sugar
  • 1 tsp vanilla extract
  • 220 plain flour
  • 1 pot of jam (any flavour)

Preheat the oven to 180C/350F/Gas mark 4.

Cream together the vegan butter and icing sugar until smooth, and add in the vanilla extract. When well blended, fold in the flour until a smooth dough, make sure all the little pieces at the bottom of the bowl are blended in.

Wrap the dough in some baking paper or plastic wrap, and place in the fridge for 30 minutes.

When the dough is out and cooled, place on a floured surface and roll out. Make sure it isn’t too thin, the dough is quite delicate and the biscuits might break if they’re thin, but you don’t have to make them too thick. Use 2 star cutters, one big and one smaller, cut out an even amount of stars and cut out the centre of half the cut out stars.

Place the whole stars (with cut out stars in the centre) on a tray lined with baking paper. On top of the whole stars place the stars with a cut out centre, so there is a little star shaped hole on each cookie.

Add a teaspoon of jam in each of the star shaped holes, and spread it around evenly around the shape. Do this with every star cookie, (don’t fill them up with jam).

Bake for 15-18 minutes until firm. Don’t worry, the jam will not bubble over, just remember to not fill the stars up to the top with jam. You can use any jam, I recommend raspberry or cherry, but you can choose what you like (I used cherry).

When out leave to cool for 15 minutes. ENJOY!
