White Chocolate Chip Cookies

Ingredients:

  • 90g light brown sugar
  • 60g caster sugar
  • 125g unsalted butter, softened
  • 1 medium egg
  • 1 tsp vanilla extract
  • 200g plain flour
  • 1/2 tsp bicarbonate of soda
  • 225g white chocolate, chopped (or white chocolate chips)

Preheat the oven to 180C/350F/Gas mark 4.

Cream together the brown sugar, caster sugar, and softened butter using an electric whisk or by a hand whisk until smooth. Stir in the egg and vanilla until even. Then, fold in the flour and the bicarbonate of soda until a dough forms into a ball. Knead in the white chocolate until it is evenly distributed in the dough.

Line two baking trays with baking paper. Separate the mixture into 9-12 evenly sized balls, put them on the tray, and slightly flatten them out (only a little).
Bake in the preheated oven for 10-15 minutes.
When out of the oven, leave to cool for 20 minutes before serving.
