Vegan Brownies

My mum is vegan so I wanted to make something that she could eat. And for all those other vegans who are taking part in Veganuary and saving the Earth by being vegan. I HOPE YOU LIKE IT!

Vegan Brownies

INGREDIENTS:

  • 200g dark chocolate
  • 80g vegan butter
  • 125g self raising flour
  • 70g ground almonds
  • 45g cocoa powder
  • 1/2 tsp baking powder
  • 245g caster sugar
  • 1 tbsp vanilla extract
  • 5 tbsp soya/coconut milk

METHOD:

Heat the oven to 170C/150C fan/gas 4.

In a saucepan, melt the dark chocolate, vegan butter and the sugar, mix until the sugar is dissolved and the chocolate is melted. When the sugar has dissolved remove from the heat. Put the flour, almonds, baking powder and cocoa powder in a bowl and mix. Add the chocolate mix in and whisk together while adding the soya/coconut milk.

Line a tin with baking paper and add your mixture. Bake for 30-45 minutes until firm. If you decorate I recommend my icing recipe (just change the butter for vegan butter and use dark, vegan chocolate). Leave to cool for 20 minutes before decorating, ENJOY!
