I love meringues, they are a rich, but challenging dessert to get right. And they are very popular. This recipe will ensure that you get them right, and then feel free to get creative.
Ingredients:
- 4 egg whites
- 115g caster sugar
- 115g icing sugar
- Gel food colouring (optional)
Preheat the oven to gas mark 1/4, 225 degrees F or 110 degrees C
Separate the egg whites from the egg yolks and make sure there is NO YOLK in it. You need to make sure NO EGG YOLK is in your mix, otherwise it won’t work. Use an electric beater an whisk until light and fluffy. Add the caster sugar a table spoon at a time counting 10 seconds in-between each spoonful, still mixing with the electric beaters. When you are out of the caster sugar add the icing sugar, and use the same method. Then whisk until stiff peaks when you lift up the beaters.
Separate the mix equally into separate bowls and add one of your food dyes to each bowl. Make sure the colour is evenly blended.
Place dollops of the mixture on a lined baking tray. You can stack the colours up or make individual colours.
Bake in the oven for 1 hour.
