Ingredients:
- 250g golden caster sugar
- 250g unsalted butter
- 5 medium eggs
- 250g self raising flour
- Gel food colouring (I used orange, red, pink, blue)
Preheat the oven to 191C/375F/gas mark 5.
Cream together the butter and sugar until fluffy and pale. Add the eggs one at a time, and beat together until smooth. Slowly fold in the flour, and mix until smooth. Split the mixture between 4 bowls and add your food colouring. One into each bowl. I recommend using gel food colouring, but with everything going on I couldn’t get some. Line two cake tins with baking paper and pour in half of one colour into each tin. Then add half of the second colour and so on, until all 4 colours have been added to each tin. Bake for 20-30 minutes until a knife can be poked into the centre and comes out clean.
Leave to cool for 20 minutes before decorating, I just spread jam in the middle but you could also use buttercream and decorate the top too, if you want.
