Fondant Fancies

Ingredients:

  • 225g unsalted butter, softened
  • 225g caster sugar
  • 4 eggs
  • 225g self raising flour

For Decoration:

  • 150g marzipan
  • 1 tub of buttercream
  • 700g fondant
  • 1 tsp gel food coloring (yellow and pink)
  • 150g milk cooking chocolate

Preheat the oven to 160C/320F/gas mark 3.

Cream together the butter and sugar. Add in the eggs one at a time and mix until well blended, fold in the flour. Line a square tin (20cm) with baking paper and pour in the cake mix. Bake for 35-40 minutes until firm and a knife can be poked in the middle and it comes out clean. Wait until it’s cooled and cut the cake into 16 square pieces.

For decoration, cut the marzipan into little squares and stick them on the top of the cakes with the buttercream. Also, put buttercream on the sides so the fondant will stick on. Colour the fondants with your food colourings and roll them out. Cover the cakes with the fondant making sure it covers the whole cake. Do that with all the cakes. Melt the chocolate and put it in a piping bag. Pipe a z shape with the chocolate on the cakes and then you’ve got a fondant fancy.
