Peppermint Pie

Ingredients:

For the base:

  • 250g chocolate flavoured cookies
  • 150g unsalted butter, melted

For the filling:

  • 185g marshmallows
  • 180ml whole milk
  • 1/2 tsp peppermint essence
  • 1/2 tsp green gel food coloring
  • 300ml thick double cream

For the base: Crush the chocolate cookies in a zip lock bag until they are chunky crumbs and then put them in a mixing bowl. Add in the melted butter and mix until it is a very thick paste. Scrape the mixture into a lined tart baking tin and press it to the sides and the bottom so it is evenly spread. Place it in the fridge for 35-40 minutes.

For the filling: In a pan, over a high heat, melt the marshmallows in the milk. When it is done, take it off the heat and let it cool for 5 minutes. Then add in only half a tea spoon of peppermint extract (otherwise it will taste like toothpaste) and add half a tea spoon of green food coloring. In a separate bowl, whip the cream with electric beaters until thick, then add it into the peppermint mix.

Add the filling into the base and place it in the fridge for another hour.
