Vegan Cupcakes

Ingredients:

  • 125g caster sugar
  • 125g plant based butter or Trex
  • 100ml oat/almond/soya milk (your choice)
  • 125g self raising flour
  • 1 tsp baking powder

Preheat the oven to 200C/400F/gas mark 6.

Cream together the vegan butter and sugar until smooth, and then add in the oat or almond or soya milk. Mix until well blended, then add in the flour and baking powder. Mix it until it is a smooth batter that tastes amazing.

Line a cupcake tin with cupcake cases, and spoon the batter into the cases, they have to be about half full. Bake for 20-30 minutes.

When out, cool for 15 minutes before decorating.
