My vegan recipes are so popular and taste exactly like the non vegan snacks. But I have to say, these vegan banana muffins taste so much than normal ones, maybe even better!

Ingredients:
- 3 large bananas
- 80ml sunflower oil
- 125g caster sugar
- 225g plain flour
- 1 tsp baking powder
- 1 tsp bicarbonate of soda
Preheat the oven to 180C/350F/Gas mark 4.
Mash the bananas with a fork, until soft with few lumps. Add in the oil and caster sugar and mix until smooth and creamy. Add in the flour, baking powder, and bicarbonate soda and mix until well blended. Line a cupcake tin with muffin cases, spoon the mix into the cases until just over half full. Bake for 25 minutes.

When out, leave for 20 minutes to cool.
