I made this for my aunt’s birthday and customized it for her. I hope you like this rich, sweet, fruity cheesecake, I realized this was what’s missing to the cheesecake section of my blog. I hope you ENJOY!
Ingredients:
For the base
- 150g melted, unsalted butter
- 300g crushed digestive biscuits
For the filling
- 675g cream cheese
- 175g icing sugar
- 300ml double cream
- 1 tsp vanilla extract
- 200g blended strawberries
- 1/2 tsp red food colouring (optional)

For the base: In a bowl, mix the melted butter and crushed biscuits. It will become a thick mix that doesn’t stick to you. Use a 20cm greased cake tin, add in the mix and press to the sides until all even. Use extra mix and put them in little glasses to make mini cheesecakes! Place in the fridge while you make the filling…
For the filling: Use an electric whisk to whisk the cream cheese and icing sugar until thicker and well combined. In a separate bowl, use the whisk to whisk the cream and vanilla until stiff peaks hold. In the cream cheese mixture, add the blended strawberries and mix until combined. And mix in the food colouring, this just makes it look a little brighter, and add in the cream mix.

Pour some of the mix into the big cheesecake dish, and add the rest into the mini cheesecake bases. Put in the fridge for an hour, and store in the fridge.
