Marshmallow Chewy Cookies

Chewy cookies taste amazing on their own, but adding sweet, gooey marshmallows just makes them even better! These are a good weekend or after-dinner treat! I hope you like them…

Ingredients:

  • 100g softened, unsalted butter
  • 50g soft dark brown sugar
  • 50g caster sugar
  • 2 tbsp golden syrup
  • 165g self raising flour
  • 150g marshmallows (chopped into little chunks)
  • Icing sugar to dust

Preheat the oven to 180C/350F/Gas mark 4.

In a large bowl, mix the butter, dark brown sugar and caster sugar, add in the golden syrup, and mix until combined. Pour in the flour, and form into a dough.

On a chopping board, dusted with icing sugar, chop up the marshmallows into little chunks. They tend to be sticky, so sprinkle icing sugar on them if needed. Add in the marshmallow chunks, and fold in with the dough.

Line two baking trays with baking paper, and roll the dough into balls and place them on the trays, making sure they aren’t close together. Bake for 10-15 minutes until golden, they may still be soft but you have to let them cool to harden. Leave to cool for 10-20 minutes.
