Philip’s Apple Turnovers

Apple turnovers taste amazing, they are a great dessert, and go with lots of food! I love these desserts, I think they go best with cream, and I hope you like them!

Ingredients:

  • 2 cooking apples, peeled and diced
  • 3 tbsp light brown sugar
  • 1 1/2 tsp ground cinnamon
  • 2 tbsp lemon juice
  • 1 sheet puff pastry (frozen preferred)
  • 1 egg to egg wash
  • Caster sugar (optional to dust)

Preheat the oven to 200C/400F/Gas mark 6.

Peel and dice the cooking apples. In a large bowl, mix the sugar, cinnamon and lemon juice until it looks like a thick paste. Add in the diced apples, and mix until the paste has coated the apples.

On a floured surface, roll the pastry out until quite thin and wide, if it came rolled out in the package just roll it out a little more. Cut the pastry into squares, and put a tablespoon of the apple mix on one side, and fold it over. Place on a lined baking tray, and cut a little line through the middle, so the air can get through.

Crack an egg and whisk it with a fork, use a food brush to spread a small amount of egg on each turnover, and don’t add to much. Sprinkle some sugar on top (if you wish).

Put in the oven for 15-20 minutes, until golden.

When out of the oven, leave to cool for 20 minutes. The filling will be hot, so make sure it is cooled through. If you would like, you could serve with double cream or ice cream.
