Vegan Sugar Cookies

My brother couldn’t tell these were vegan and I don’t think you will either. I hope you like these tasty sugar cookies, that are 100% vegan.

Ingredients:

  • 115g vegan/plant based margarine (you will probably find this in the shop)
  • 75g caster sugar
  • 75g light brown sugar
  • 4 tbsp soy/almond/coconut milk
  • 250g plain flour
  • 1/2 tsp baking soda (bicarbonate of soda)

For the icing:

  • 200g icing sugar
  • 3 tbsp soy/almond/coconut milk

Preheat the oven to 180C/350F/Gas mark 4.

Cream together the butter and both the sugars. Add the milk in and make sure the mix is smooth. Fold in the flour and baking soda, and form into a dough. Role out the dough on a floured surface and cut out the cookies with a circle cookie cutter.

Line a baking tray with baking paper, and put on the cookies and bake for 10-15 minutes. Leave to cool for 10 minutes.

For decoration: Mix together the icing sugar and milk until a thick mix. You can spread it on the cookies or use a piping bag.
