Mini Gingerbread Men

Ingredients:

  • 145g unsalted butter
  • 110g light brown sugar
  • 55g golden syrup
  • 330g plain flour
  • 1 tsp bicarbonate of soda
  • 1 tsp ground cinnamon
  • 3 and 1/2 tsp ground ginger
  • Mini gingerbread man cookie cutters (you can also make bigger ones from this recipe)

Preheat the oven to 200C/400F/Gas mark 6. Line 1 or 2 baking trays with baking paper.

In a pan, add the butter, sugar, and golden syrup and melt over the hob/stove on medium heat, stirring continuously until all melted and smooth. Leave to cool for 5 minutes.

In a large bowl, fold together the flour, bicarbonate of soda, cinnamon, and ginger. Pour the melted sugar mixture into the flour, and fold together to form a dough.

Roll the dough out on a floured surface (also flour the rolling pin to make sure the dough doesn’t stick), and use the gingerbread man cookie cutters to cut out the dough into cookies and place each one onto the lined baking tray.

Bake in the preheated oven for 10-12 minutes. When cooked, leave to cool for 10-20 minutes.
