White Chocolate and Oreo Cookies

Ingredients:

  • 90g light brown sugar
  • 90g caster sugar
  • 120g unsalted butter, softened
  • 1 tsp vanilla extract
  • 1 large egg
  • 250g plain flour
  • 1 tsp baking power
  • 1 1/2 tsp bicarbonate of soda
  • 200g white chocolate chunks (or white chocolate chips)
  • 125g Oreos, crushed

Preheat the oven to 180C/350F/Gas mark 4. Line 3 baking sheets with baking paper.

In a large bowl, cream together the softened butter, brown sugar, and caster sugar until light and well combined. Add in the vanilla extract and eggs and continue to beat until smooth. Finally, add the flour, baking power, and bicarbonate of soda and fold in until a dough forms.

When the dough is made, knead the white chocolate chips and crushed Oreos into the dough.

Roll the dough into balls, about a tablespoon of dough for a cookie, and place them on the baking trays, make sure to leave enough space between them.

Bake for 15 minutes until they are golden on the edges. When they are cooked, leave them to cool for 20 minutes before serving.
