Mini Rolls

Mini rolls are to die for, but wouldn’t it be that much more special if you made them! These mini rolls taste exactly like shop bought ones, and are so easy to make! These are perfect for parties, baby showers, any occasion, not that you can really celebrate right now, but they would also be perfect for Saturday nights!

Ingredients:

  • 3 medium eggs
  • 125g caster sugar
  • 85g plain flour
  • 3 tbsp cocoa powder
  • 1/2 tsp baking powder
  • 300g milk chocolate (to cover them in)

For the icing/filling:

  • 125g softened butter
  • 450g icing sugar
  • 6 tbsp milk
  • 1 1/2 tsp vanilla extract

For the cake: Preheat the oven to 200C/400F/Gas mark 6. Whisk together the eggs and sugar until very pale. Fold in the flour, cocoa powder and baking powder until no lumps. If you made the Yule Log recipe on my blog the mixture will look a lot like that. Line a swiss roll tin with baking paper, and pour in the mix. Bake for 15 minutes until soft and springy to the touch.

For the icing: Use the electric mixer and blend together the butter, icing sugar, milk and vanilla until very smooth.

When the cake is out, leave to cool for 20-25 minutes. When completely cool, roll up one of the wider sides of the cake to the middle of the sponge, do the same with the other side, so you have to thin, long rolls on each side. Slice through the middle, and then chop them into mini roll sizes. Unroll them, put in the icing, roll them back up, and then put them in the fridge.

Melt the chocolate over a double boiler or in the microwave. Cover the chilled mini rolls in the chocolate and let the chocolate set/harden.
